超懶人式蘋果派 Super Lazy Bum's Apple Pie

因為最近一個月來
蛋糕, 餅乾, 瑪芬, 泡芙都做過了
真不知道接下來該玩些甚麼新花樣才好
這是玩點心時會碰到的困擾之一

另外有在玩點心的朋友們一定都會有個困擾 :

材料買了總是用不完
家裡就東剩西剩些有的沒的


因此星期五晚上就拿家裡現有的剩餘的、吃不完的材料, 像是 :

蘋果

味道像消化餅乾的燕麥巧克力豆曲奇餅乾
奶油乳酪

弄了個 超懶人式蘋果派

總之就是隨興組合

我本身不太喜歡玩奶油成份較高的麵糰
因此想到要做派皮就意興闌珊........
但是對於蘋果派來說
沒有派皮這可怎麼辦呢........

那就用現有的餅乾壓碎代替派皮吧 !

做出來的成品看起來雖然不太專業
但味道卻出奇地好 !
這懶人蘋果派竟然全部都被吃完了 !

剛出爐熱熱的吃
肉桂的香味與酸酸甜甜的蘋果檸檬餡堪稱絕配 !
奶油乳酪營造出蘋果餡濃稠柔細的醬汁 !
使 滑順的蘋果餡能輕易地與鬆散的餅乾派皮
形成有層次的對比搭配 !

I've made cake, cookies, muffins, puff in the last month already,
and I dont know what else I can make for a change these days.
The shop always serve some BIG amount material such as the cream cheese,
u need to buy 1000 g a time, and the , the oats chocolate chips cookie I made last Wed and apple were left cause Tim is not a big apple fan - apple is too common in NZ.

I'm not a big fan to make some kind of buttery dough.
But how to make an apple pie without pie dough ?
So I thought about crushing the oats chocolate chips cookie to replace the pie dough !

The apple pie looked not very traditional/typical but actually it was pretty good !
At least we ate it all very fast !

As the apple pie was just out of the oven,
the fragrant cinnamon smell went very well with the apple-lemon filling !
And the cream cheese made the apple filling sauce really smooth, that goes well with the
cookie-style pie dough.


重點來了!
Anyway lets do it !

食譜:   1 個份











中型蘋果 3 個 ( 最好選用質硬脆且偏酸的 )
萊姆或檸檬 1 個

無鹽奶油 2 大匙
細砂糖 依個人喜好
奶油乳酪 2 大匙
薑汁汽水 約 50 cc ( 在賣場可買到, 也可不加 )
肉桂粉
依個人喜好

Ingredients:

3 medium size apple ( sour one is better )
1 Lime or lemon

2 Tsp unsalted butter
sugar as much as u want
2 Tsp cream cheese
50 cc Ginger Ale
cinnamon powder as much as u want

作法 / Steps:

將萊姆切半, 其中一半擠汁
與削皮蘋果全放進一盆水中

Cut the lime and squeese one of it
Put the lime, lime juice and apples into a bowl full with water.
















將蘋果切成薄片

Cut the apples into small sliced pieces.












鍋中放入奶油融化後倒入蘋果片炒至微軟出水
再加入適量的糖

Melt the butter in a frying pan and fry it into a bit soft, then add some sugar in.

待砂糖全溶化後
加入過篩無顆粒的奶油乳酪拌勻

After the sugar is all melted, add the cream cheese in and stir it well until its all smooth.

註: 會用奶油乳酪的原因是, 我不是很喜歡玉米粉這項材料,所 以用奶油乳酪去帶出蘋果餡的濃稠度
I replace the cornstarch with the cream cheese to make the apple filling sticky enough to fill in.












倒入薑汁汽水
並灑入肉桂粉

Pour the ginger ale in,
then add some cinnamon powder in.


蘋果煮至濃稠且軟 ( 但蘋果片內部仍稍硬脆 ) 即可熄火備用

Heat and stir the apple until its sticky and soft ( but still a bit hard inside ), set it aside.

















準備一些巧克力曲奇餅
放入塑膠袋內滾碎

Prepare some chocolate chips cookies, and put them into a plastic bag and mash it.












將餅乾碎倒入一烤盤內
再將蘋果餡倒於其上

Put the cookies into a baking container.
Add the apple filling on the top.


以 200 度烤約 15 ~ 20 分鐘
烤至後期若底部餅乾已快焦黑
可關下火
並將上火調整在 250 度以利蘋果餡表面上色

Bake it at 200 centigrade for 15~20 min.
If the cookie is getting burnt, u can close the down fire,
and turn the upper fire into 250 centigrade and bake it until the surface of the filling is golden.
