巧克力咖啡蒸糕 Steamed Chocolate Cake


為了做好母親節的提拉米蘇
必須使用到巧克力海綿蛋糕

但因為老媽家沒有烤箱
去電器行又沒有看到像樣的 高 C/P 值中型烤箱
最後只好打消烤蛋糕的念頭..............
想說乾脆只放手指餅乾好了









但就在打算放棄時
突然間腦袋閃過ㄧ個念頭

" 誰說蛋糕只能用烤的 ?? "
" 反正最後那層放在提拉米蘇內的蛋糕體還是要泡咖啡酒, 還是會潮濕掉 "
" 也許提拉米蘇使用的蛋糕不需像戚風那樣鬆軟 "


因此當下決定使用蒸的方式做出那層蛋糕體 !

For making the Mother's Day Tiramisu cake,
I have to put a layer of chocolate sponge cake in the Tiramisu.

But there's no oven in my mum's house,
and I didnt see any good medium-size oven at those elec shops.
So I had to give up baking any cake, just buy some finger-shape cookies for the Tiramisu.

And suddenly I thought about :

" Why I need to BAKE a cake ?? "
" Anyway the cake in the tiramisu will be soaked in some coffee wine and get wet "
" Maybe the cake for the tiramisu neednt be really soft like chiffon "


And then I decided to STEAM a cake for the Tiramisu !


重點來了!
Anyway lets do it !

食譜:   8吋模 1 個份









可可粉 25 g
小蘇打粉 2 g
沙拉油 30 g
咖啡 30 g ( 可用即溶咖啡 )

全蛋 200 g ( 約 中型蛋 4 個 )
二砂糖
80 g ( 即黃砂糖 )
低筋麵粉 150 g
泡打粉 1 g
鹽 1 g

Ingredients:

25 g cocoa powder
2 g baking soda
30 g salad oil
30 g coffee ( u can use the 3-in 1 instant coffee )

200 g egg ( about 4 medium-size egg )
80 g sugar
150 g flour
1 g baking powder
1 g
salt

作法 / Steps:










將沙拉油隔水加熱至 80 度 C 後
將可可粉倒入熱沙拉油中拌勻

Heat the salad oil up to 80 centigrad
Then add the cocoa powder into the hot oil.


接著將咖啡加入可可油糊中拌勻

Add the coffee into the cocoa batter and stir it well.














將雞蛋泡於微燙的熱水中靜置
使蛋液溫度達到約 45 度 ( 微燙的洗澡水溫度即可 )

Put the eggs in the water which is a bit hot, until the eggs reach to about 45 centigrade.
( 45 C is like a bit hot bath water. )











將二砂糖全倒入打散的蛋中
攪打至整個蛋糊呈現濃稠細緻泡沫狀態

Add the sugar in the eggs and mix it until the egg batter is sticky and smooth.











於打發的蛋中加入低筋麵粉拌勻
再加入可可油糊攪勻

Add the flour into the egg batter and mix it.
Then add the cocoa batter in and mix it well.











將麵糊充分拌勻後
倒入 8 吋活動模中
以 中小火 蒸約 30 ~ 40 分鐘

Pour the well-mixed batter into a 8'' tin.
Steam it with low temperature fire, for 30 ~ 35 min.


將蛋糕倒扣放涼後脫模

Reverse the tin until the cake is cold.
Then get the cake out of the tin.


























試吃了幾口
可可味不會過重
也不甜膩
但因為是用蒸的
組織雖密但有些粗糙
孔洞較戚風大些
就像黑糖糕般的蛋糕

泡入咖啡酒後應該會與提拉米蘇搭配吧 ?

Had few bites.
The cocoa was not too strong and not too sweet.
But the cake was not very soft cause its steamed,
and there are bigger holes in the cake compared with chiffon.
May match the Tiramisu after its soaked in the coffee wine ?

well I was really annoyed with the problem u mentioned haha. Some pics are just repeated for 2 cause one time when I was on my mum's computer and read my blog, some pics were disappeared.So I attached the pic onto my article again. Then as I came back to my laptop, found there are 2 same pics ! Maybe some bugs on my blog template or sth.
I suggest u to use Firefox browser to render the web pages. That will ensure u to get better surfing experiences !
