Chocolate Chips Cookie 巧克力豆曲奇

上禮拜五買了一包 " 耐烘培巧克力豆 " - Chocolate Chips
所謂的 " 耐烘培 " 換句話說
就是 " 即使將它丟入烤箱以高溫烘烤 "
它仍然 " 不會溶化 "
得以維持其獨特的圓錐狀


I bought a pack of chocolate chips last Friday.
The Chocolate chips wont melt during baking.
Actually it was designed to retain their round, flat-bottomed teardrop shape when baking, they contain less cocoa butter
than baking chocolate

像是 Subway 套餐可點選的那些巧克力曲奇餅
用的即是這種耐烘培巧克力豆
再說如果妳小時候去過芝麻街
妳對那隻愛吃巧克力曲奇餅的藍色Cookie Monster應該不陌生吧 ?

You must see them at Subway Sandwich restaurant
when u tried to order a combo with some cookie options. Those cookies are with this kind of chocolate chips.

If u ever went to Sesame Street School,
you must be familiar with the blue cookie monster who is such a chocolate chips cookie nerd ! @@

總而言之
這項點心在大約70幾年前出現
是由 The Toll House Inn 的 Ruth Graves Wakefield 所發明
這餅乾使她獲得巨大的成功
並將她所發明的Chocolate Chips Cookie食譜授權給雀巢公司
雀巢公司則回饋提供Wakefield 一輩子免費吃不完的巧克力


Anyway !
This cookie appeared about more than 70 years ago.
It was invented by Ruth Graves Wakefield of the Toll House Inn.
This cookie brought her a huge success, and Wakefield reached an agreement with Nestlé to add her recipe to the chocolate bar's packaging in exchange for a lifetime supply of chocolate.

食譜: 巧克力豆曲奇餅

材料: 約25大片的份量

蛋  1個
細砂糖 75 g
黑糖  100g
鹽  1小撮
香草精 1茶匙
奶油 100 g
低筋麵粉 225 g
泡打粉 1茶匙
耐烘培巧克力豆 150 g

Ingredients for Chocolate Chip Cookies
For 25 cookies

1 egg
75 g sugar
100 g soft brown sugar
1 pinch salt
1 teaspoon liquid vanilla
100 g  butter
225 g flour
1 teaspoon baking powder

150 g couverture chocolate


作法/Steps:

將奶油丟入攪拌盆中, 若奶油剛從冰箱取出不夠軟

可利用吹風機稍微溫熱

Put the butter in a mixong bowl.

If the butter is not soft enought, u can use a hair dryer to heat & soft it a bit.



以打蛋器將奶油攪拌至完

全散開

Blanch the butter well until its all smooth.





依序加入細砂糖及黑糖
攪拌均勻
Blanch the softened butter with the white sugar and soft brown sugar.





將雞蛋打入攪拌盆中
攪勻

Add the egg / Mix it.







再加入 1茶匙的香草精拌勻

Add the 1 tsp liquid vanilla / Mix it.

加入少許鹽拌勻

Add 1 pinch salt.
Mix it.






加入 150 g 的巧克力豆 及 1茶匙的泡打粉

Add chocolate chips and baking powder.








將低筋麵粉過篩分次倒入盆中
輕輕地攪勻即可
不可過度攪拌

Seize the flour in and mix it lightly.
Once the batter gets smooth then stop mixing.
Don't need to mix it too much.




拌好的餅乾奶油麵糊看起來像這個樣子

The batter will look like this.








接著準備烤盤/烤盤紙 Arrange the tray / greaseproof paper.












利用兩根湯匙舀起麵糊至烤盤上
每個麵糊間須保留至少 5cm 的間距

Use two spoons to arrange the batter and put it on the greaseproof paper.

Be sure there's at least 5 cm distance among those batters.




中型烤箱約可烤兩盤
共約 25-30片

Need to bake for 2 trays.
About 25-30 pieces.






烤箱設定溫度 180度 C
烤約12-14 分鐘

Set the temperature at 180
Centigrade.

Bake about 12-14 min.
























烘烤過程中麵糊會因奶油融化而攤開
因此麵糊間保持間距就很重要了

During baking cause the butter melted, the batter then spreaded out.
Thats why its important to keep some distance among those batters.























這曲奇放涼了邊緣會變得很脆 
原本預期會像 Subway 的餅一樣為軟式餅乾
也許是烤箱溫度過高
或是蛋的分量不夠的關係
奶油份量較多也會導致餅乾較脆

巧克力豆曲奇搭配熱可可 ? = =
我想對我們一般人來說太甜了點
我比較喜歡搭配冰得超級冰的鮮奶
這樣才算是絕配 !

The cookie was quite crispy when its cooled.
I expected it will be chewy & soft cookie tho.
Maybe the oven temperature was a bit high
or didn't put enought egg.
BTW the more butter in, the more chirspy will be.

I think it would be a bit too sweet......
Better to eat the cookies with a glass of extremely iced milk.
That would be awesome !
