無糖 / 低甜度 卡士達醬 Sugar-free / Low sugar Custard


卡士達, 即一般俗稱的奶黃醬/凍
至少約在西元 14 世紀時的即已出現在英國人的餐點中

Custard, also known as " Milky-yolky Sauce " in Asia.
Custard was known in English cuisine at least as early as the fourteenth century.

卡士達是一種搭配性很高的甜點醬料
除了一般熟知的車輪餅外
泡芙, 麵包餡料, 蛋塔, 蛋糕.......等均可佐以卡士達醬
另外將卡士達淋在綜合水果盤上
也是常見的吃法

Custard can go with many dessert very well.
Apart from the well-known " Wheel Pie ",
Puff, Bread filling, egg tar, cake...... etc, all go well with custard sauce.
Or its quite popular that u have some custard with ur fruit.

介紹有一種很紅的網購 " 爆漿小餐包 "
也是卡士達的傑作吧 !

重點來了!
Anyway lets do it !


食譜/Recipe:


蛋黃 3 個
細砂糖 3 大匙 ( 這個份量是一般甜度減半, 若要製作副食品, 則不加)
玉米粉 3 大匙 ( 或可改為 1.5 大匙的玉米粉 + 1.5 大匙的低筋麵粉 )


溫熱的鮮奶 300 cc ( 使用鮮奶者, 須先將鮮奶加溫 )
( 若要製作副食品, 則使用300cc 配方奶: 一般約5湯匙奶粉+熱水 至 300 cc )


香草精 2~3 滴


English Recipe:

3 egg yolk
3Tsp sugar ( 50 % sugar of the normal one )
3Tsp corn starch ( or u can add 1.5 Tsp corn starch + 1.5 Tsp flour )

100 cc Milk
1~2 drop Vanilla Essence

作法 / Steps :


蛋黃 3 個倒入盆中拌勻
再加入 3大匙 細砂糖
( 製作副食品者, 不加糖 )


Put the egg yolk into the mixing bowl and stir it.
Then add sugar in and mix it.


再加入 3大匙 玉米粉

Add the corn starch in and mix it.

















於平柄鍋中泡牛奶
將奶粉及溫水依序加入
再拌勻
接著滴入香草精 ( 製作副食品者, 不加香草精 )
拌勻

Make some milk in a pot if u want to use milk powder.
Then add the vanilla essence in and mix it.



將牛奶加入蛋黃糊盆

因為牛奶有溫度
所以要邊倒邊攪拌
以免蛋黃熟了 !

Pour the milk in the egg yolk batter.
Cause milk is pretty hot,
u need to keep mixing while u pour it into the mixing bowl.


將蛋黃牛奶糊倒回用來泡牛奶的那只平柄鍋

Pour the yolky/milky batter back into the pot.







以中小火加熱平柄鍋
全程需不斷地攪拌

Heat the batter with medium high heat.
Keep mixing it while heating.






卡士達糊會有一個開始變濃稠的瞬間

The custard will turn into sticky/stiff at a point.








此時馬上轉小火
並持續攪拌

Turn the fire into the smallest degree,
and keep stirring it.






當卡士達看似不會再更濃稠時
便可離火

When the custard cant be stickier anymore,
turn off the fire.






離火後可再多攪拌個幾下
香濃的卡士達醬便完成了

Stir it and its done.





























將卡士達醬分 3 等分倒入有蓋的容器中
每份即包含有 1 個蛋黃
將容器置入冰箱冷藏 / 冷凍保存

Evenly pour the custard into 3 containers.
So each portion has 1 egg yolk in.

Put the container into fridge / freezer.





















可拿其中一份量
塗於吐司麵包上, 再放進烤箱烘烤個 5 分鐘
烤好後再放上一些切片香蕉, 並淋上一些巧克力醬
就是一道健康低糖的點心
